do fermometers work on a bucket?

The swamp cooler itself will regulate the temperature in the fermenter. It is about creating a uniform environment between the wort and the water. There is a layer of plastic or glass between the two, but as long as the water level outside the FV is at the same level as the wort the temps will be very close to each other.

As far as monitoring, I use a digital thermometer probe in the swamp cooler and add ice when needed.
 
Using a thermowell is probably the best way, but I use a fermometer and a thermocouple taped to the side of the bucket. I've gotten to where I can usually predict the temp of the wort/beer by reading the fermometer and my thermo.. The wort is usually about 3*F higher than the fermometer during initial few days of fermentation. Once fermentation dies down it's usually 1-2*F higher than the stip..
 
Buy a $2 pool thermometer and drop it in your ice bath. Shoot low.
