I've got a bunch of hops sitting in a freezer and some excess yard hops that I'd like to use so waste of hops isn't a concern of mine.

15# 2 Row
2# Carapils
.5# Crystal 120
1# Dextrose

2oz Mosaic @ 60
4oz Cascade (yard) @ 10
1oz Mosiac @ 10
4oz Simcoe @ 5
2oz Mosaic @ 5
6oz Simcoe @ 2
4oz Cascade (yard) @ 2

WLP060 - Ferment @ 68ish

2oz Simcoe dry hop for 14 days (secondary)

70% efficiency (est)

1.083 OG
150 IBU's
9.3% ABV
Mash @ 151

I do have some Galena that I could use for the 60 min hops and push the rest all of the Mosiac later in the brew.

Thoughts?
 
That's a lot of Caramel/Crystal. If you wanted to cut down a little, you could go with 1 lb. CaraPils, 8 oz. C60L, and 8 oz. C120L. Might round out the flavor a little.

Instead of dextrose, you could use brown sugar. Would add a subtle flavor undertone.

I like your idea about bittering with Galena and moving the Mosaic late. I had a Community Mosaic IPA during the summer that was very nice, partly because of the big tropical fruit.
