I have made about 5 batches so far all different. Only one of them has a head. It has a little too much if you ask me. On the batch with the good head I used pellet hops. The others were leaf. Would this be the difference or I am just missing something? If you need more info I would be happy to provide it. I didn't know what else to so so I will leave the questions to the experts. Thakns again!

I don't think the hops had too much to do with the head, or lack there of, in your beers.
Can you post some of the grain bills for the ones you've brewed?

Understanding your grain bill will give you an idea as to the potential proteins available to make good beer head. I believe, but I may be wrong on this one, that grains providing body and mouth feel such as carapils, wheat malt, etc with help. Also, keep in mind that the container you are serving out of can also be a factor. Any oil residues (or for that matter some dish detergents) will prevent beer head from forming.
