I like to make my yeast wait till last for their desert of Simple sugars.
 
Wort has plenty of glucose (AKA dextrose) and sucrose in addition to maltose, maltotriose, and dextrins. Brewers yeast generally eats everything but the dextrins.

After yeast finishes fermenting wort, it's perfectly capable of fermenting more wort. We see this all the time with yeast starters.
