Special pour at Cantillon's closing today: Lambic containing yellow wine from Jura.

Description notes:
The barrels used are extremely rare (only 2 at this winery) as the wine takes 7 years to make. Lambic was aged 2 years in those barrels. It's the combination between an excellent Jura wine maker and Cantillon (winery name was not given). It took a few years to forge this relationship. Apparent it will not be bottled, tho I saw a bottle behind the counter with a white label containing "Solieil Vxxxxx (couldn't see the last 5 letters), Limited Edition" penned in black ink - when I asked what the last word was I was told "don't worry, it doesn't exist." I believe this is what may have been poured.

Tasting notes:
Delicate white wine with very low carb. Citrus, lemon, funky chardonnay-esque flavors. Mouthfeel is silky with a light, almost non existent feeling on the palate. Slight curry spice exhibited on the finish. Closest wine like beer I've ever had. This was an absolute treat.

The winery was likely Stephane Tissot. He has bottled the Lambic Jaune (aged in Vin Jaune barrels) before, but there are alternating reports now that there are a couple different batches that may or may not also include some grapes or grape must in there. The bottle that Jean poured for us in June was absolutely phenomenal.

When they said "very rare wine maker from Jura" I asked if it was Pierre Overnoy - "No, Tissot" was the response. Must be what you had or a different blend. Regardless, it was incredible.

What the hell? I was there as well.... Thought that beer was very interesting, very buttery like a Chardonnay.
 
I found this bottle in my basement, and I'm not sure where I got it from - either a trade extra or an ancillary item in a bulk set from BIAB. Really had no idea what to expect, other than 6.8% ABV:

It tastes quite a bit like a gueuze, except a little sweeter. Apply whatever gueuze-like adjectives you want, because I sure as hell can't distinguish barnyard from horse blanket from cobweb. I kept thinking of it as a gueuze on training wheels - not a ton of complexity, but also nothing that would obviously offend someone new to the style. I expected to dislike it and move on to something else, but really enjoyed it and had no problems finishing the whole thing. I doubt I'd buy it (again?), but would be happy to drink it again if offered.

So, what the hell is this thing from Belgium? A gueuze? Let's check the go-to site for lambic and its derivatives:
