So, I've been brewing for a little less than a year, and I've started entering my beers into competitions to get feedback. This one was almost an afterthought for Keystone Hops' 2021 War of the Worts competition. I had extra room in my shipping box, so I decided to throw this one in. My other beers did OK, but this one won 1st in the American Ales category, and 2nd place Best of Show! I was shocked!

This was my first attempt at building my own recipe from scratch. It's an all-Citra hoppy APA, and it turned out quite tasty!

Brew Method: All Grain
Style Name: American Pale Ale
Boil Time: 60 min
Batch Size: 5.5 gallons (fermentor volume)
Efficiency: 74% (brew house)

Original Gravity: 1.057
Final Gravity: 1.011
ABV (alternate): 6.2%
IBU (Tinseth): 52.55
SRM (Morey): 8.13
Mash pH: 5.4

FERMENTABLES:
9.25 lb - 2-Row (80.4%)
1 lb - Munich Light (8.7%)
0.5 lb - Caramel 40L (4.3%)
0.5 lb - White Wheat Malt (4.3%)
0.25 lb - Caramel 20L (2.2%)

HOPS:
2.25 oz - Citra, 12.9 AA, 16 min
3 oz - Citra, 12.9 AA, flameout
2.75 oz - Citra, 12.9 AA, dry hop (5 days)

Mash @ 154F for 60 min. Batch sparge.

OTHER INGREDIENTS:
1 each - Whirlfloc, 10 min boil
0.5 tsp - Yeast Nutrient, 10 min boil

YEAST:
Fermentis / Safale - American Ale Yeast US-05
Fermentation Temp: 67 F
Pitch Rate: 0.75 (M cells / ml / deg P)

Carbed to 2.26 vol

My wife really likes this beer. We've brewed it a couple times.
Tomorrow I'm brewing a 15 gallon batch on the Grainfather G70.
Came up a little low on citra so i'm subbing some cascade.

The Mosaic version was good, but I still like the Citra better. My next batch will be all-Centennial, then I want to try an all-Amarillo version.

Ooooh, all Amarillo sounds tasty!
 
Just brewed this on Sunday. My OG came in a bit higher but who’s complaining. Fermenting w/Imperial A62 (Bells House Yeast). It smells amazing. Can’t wait to try.
