I have this fridge for doing dry cure chamber. There are no coolant coils in the bottom, and I believe also the top. Not sure about the rear (if you wanted to drill for a beer tower or CO2 lines).

Exactly right. I contacted Danby and they confirmed that the top can be drilled for a tap and there are no lines in the bottom. The lines zig zag up and down the sides of the fridge. I can provide the diagram they sent me.
 
I've never used pin locks, so I'm not sure.

The interior is 18 1/8" wide, but there are some shelf channels that protrude a bit into the interior, making it 16 5/8" wide. You could probably trim these channels the same way I've trimmed the plastic shelving from the door.

The interior height is 28 13/16" and the depth at the bottom is 10 3/4". There's a shelf of sorts above the compressor in the rear of the interior, so the top 2/3 of the space is much deeper. I used to put my gas bottle on that shelf.

What about the rear? I only need holes in the top and bottom for my purposes.
