Good morning everyone!

I currently have 2 one gallon carboys in my cooler with water. Every morning I put a frozen water bottle in there and the temp stays in the low 60's all day long. Thermostat in my apartment is set to 74* during the day and then 66* before bed (we like the place cold when we sleep )

However, I am going to be out of town from Friday early morning until Sunday evening. Thermostat to our place will be set at 74 while we are gone. For the waterbath I was thinking I could put enough frozen water bottles on Friday before I leave and get the temp down to the low to mid 50's.

I know D47 has an optimal temp range of 59-68*, but is 50 low enough to make the yeast go into dormancy? I'm expecting the temp to rise around 5* per day.

Cheers! :mug:

Agree with Maylar, below 60 D47 slows way down, however once temps increase again they should perk back up and continue the ferment.
