hey! sooo i started my 2nd batch of beer and this is just a basic question.
this is not a problem i am just curious maybe someone can explain this to me

from what I read fermentation can take a day or 2 to start up and start bubbling. which is normal
I waited 3 days and nothing started happening. So I took out my sterilized hydrometer took off the cap and measured it to see if the yeast was eating anything.
When i put it in obviously it disturbed some stuff because bubbles were coming up all around. Original gravity was 1.035 now its 1.028 so I know its working but no bubbles are coming out of the airlock

put the cap back on and just let it sit more. within a few hours it starts to bubble like crazy. why is that? why did it take 3ish days/me opening/disturbing the yeast to start bubbling.

before this I made sure everything had a seal. I took the cap off and on 1 time to make sure it was on right along with adjusting the airlock.
