Critique my IPA recipe?

So I have a fair amount of Amarillo and Simcoe sitting in my freezer, and I have a chocolate stout that needs bottling next weekend, so that means open fermenter, which of course means another brew day :rockin:. I like my IPAs with upfront and somewhat smooth bitterness, but tons of flavor/aroma. This is what I've come up with so far:

Phil's American IPA
Recipe Type: All grain
Yeast: Pacman
Yeast Starter: Yep
Batch Size (Gallons): 5.00
Original Gravity: 1.065
Final Gravity: 1.012
IBU: 74.6
Boiling Time (Minutes): 60
Color: 6.4
Primary Fermentation (# of Days & Temp): 4 weeks + 1 week dry hop @ 65*F

11.0 lb Pale Malt (2 Row) US
1.0 lb Crystal/Caramel - 20L

-Mash at 150*F for 60 mins

1.00 oz Centennial [10.50%] (60 min) 29.4 IBU
0.50 oz Simcoe [14.10%] (15 min) 9.8 IBU
0.50 oz Amarillo [10.90%] (15 min) 7.6 IBU
0.50 oz Simcoe [14.10%] (10 min) 7.2 IBU
0.50 oz Amarillo [10.90%] (10 min) 5.5 IBU
1.00 oz Simcoe [14.10%] (5 min) 7.9 IBU
1.00 oz Amarillo [10.90%] (5 min) 6.1 IBU
1.00 oz Simcoe [14.10%] (Dry hop - 7 days)
1.00 oz Amarillo [10.90%] (Dry hop - 7 days)


Any ideas or suggestions? Would you move any of the late additions to flame-out? Increase the bittering hops? I'm very open to criticisms.

I like it! But yes, I'd make a couple of those additions at flame out or 1 minute. You've got enough bittering there, so I'd just consider changing up the late hops if you want. Maybe do .5 ounce at 1 minute and 5 minutes, instead of 1 ounce at 5 minutes for both.

Awesome plan! Be back in 2 months to tell the results. Until then, :tank:
 
I would use warrior up front. It's high alpha so you could slide all those others to later additions or to dryhop. It's the cleanest bittering you will find and used commercially a lot for that reason.

I agree with yooper slide some to flameout additions. Also you can get great results from double dryhop. One dose for 7 days. Pull it and do new dose for 7 days. Great aroma from this.

Lastly with the malt. I like a pinch of carapils for head. Also a pinch or aromatic malt if your trying to carry aroma of hops there is no better way.

I don't use carapils, but you could if you want. Aromatic malt gives a very strong malty aroma- 4-6 ounces is plenty.
