I know people brew with Brettanomyces, and Saccharomyces is a given, however has anyone ever attempted to brew with Candida?

I know some species of Candida might not give the most ideal results, but what about Candida tropicalis? I know from personal experience C. tropicalis smells very fruity, perhaps it would be good mixed in with a wheat beer? I am unsure of the exact by-product profile but I am doing some testing with gas and liquid chromatography (glycerol, pyruvic acid, succinic acid, various diols, lactic acid, and ethanol) to figure that out.

Anyway, anyone have any thoughts on this? Ever seen or heard of it done before?

Or should I just go it alone and try something new and wild?

typo in the title.

I am unsure of how to change the title to Brewing, not Crewing

I've heard of people fermenting with sourdough cultures, some of which have candida species in them, specifically Candida milleri
