I have been looking into mimicking some off flavors on the cheap - the $150 kit is too rich for my blood. I'm thinking:

butter flavor for baking for diacetyl
apple baking flavoring for acetaldehyde
vinegar for acetic
medicine for phenols
canned corn juice for DMS

I have yet to figure one for astingency. I'm thinking over steeping a couple tea bags in hot water, then transferring them to a glass of beer for a few min? Any thoughts?
