Creating a new Graff recipe need advice

I was planning on doing a 3rd batch of Graff.
The first 2 I followed the recipe with Cascade (too much grapefruit flavor)
and Fuggles (came out awesome but I think it could be better)
The reason I didn't think my second batch was perfect was because it was a little to sweet for my liking.
Here's my idea.
Follow the original recipe but use 2lbs light DME rather than 1lb amber and 1lb light. Use Saaz hops for an earthy spicy aroma/flavor and use 1 fresh roasted jalapeno to kick up the spice a little more.
After this batch I may knock it up another notch with some cinnamon, elderflower, star anise, etc but I need a base recipe first.
I plan to use Safale 05
What do you think?
 
I just started my first AG batch of Graff.

2# Pale Malt (2 row)
2# Pale Malt (6 row)
1# Crystal Malt 30L
3/4# Crystal Malt 120L
1/4# Flaked Wheat
1oz Mt Hood Hops
4 gal. Fresh Pressed Cider
SafAle S04 yeast

My mash wasn't very good beacuse of mashing in the very cold garage. I ended up with a 1.056 OG.

I had not thought about adding any spices to this, but I also just started two other ciders with spices.
