One of our local breweries, Schlafly, brewed a beer for a local grocery for their 75th anniversary. They based it off of a cream IPA they made for a festival. After contacting the brewery and doing some research, it looks like they started withe a base cream ale, added 165 lbs of lactose in a 15bbl batch and used Simcoe, Amarillo, Cascade, Mosaic and Nelson Sauvin hops. The beer is rated at 6% ABV and 45 IBUs. I got the cream ale and lactose part down, I was just looking for some advice on the hop schedule. Thanks for any help.

Simcoe and Cascade are used more for bittering than the others. You could make a bittering mixture of Simcoe and Cascade and use half for FWH and half at 60 minutes, and also make an aroma/flavor mixture of the Amarillo, Mosaic, and Nelson Sauvin and add some of the mixture at 15, 10, and 5 minutes.
