So I have recently brewed a couple of brewers best cream ale kits and I’m not thrilled with the results. I mean it’s decent and drinkable but something is missing.
Today I stopped by Gravity Brewing in Conyers GA to get some ingredients and some advice. I wound up leaving with
2.5lbs. 6-row
1 lb. flakes corn
1 lb. carapils
5 lbs. Pilsen DME
1 oz. northern brewer hops
I brew bag

My question is this. Does that seem like an excessive amount of DME for a 6 gallon batch on top of that grain bill? I want a drinkable 1.050 SG cream ale with 5-6% ABV tops.

Assuming
  • a yeast with 80% attenuation (US-05, Nottingham is close)
  • 75% brew house efficiency
  • my data entry is accurate and my use of Brewers Friend is reasonable
With 5 lb DME : OG 55, ABV 5.9%

With 4 lb DME : OG 48, ABV 5.1%
