Ingredients
white labs dry english cider yeast WLP775
1/2tsp DAP
pinch of Fermaid K
3 gallons store brand apple juice
2 gallons store brand cranberry/raspberry juice
2 Tbsp dark us oak chips
4 cups white table sugar
OG 1.070
ph between 3-4
I just dumped in the juice leaving half a gallon to add the sugar to shake and help dissolve then added it to the brew bucket. Then added the DAP, Fermaid K, then the oak chips.
We were going to secondary ferment and potentially add more oat chips but we were going to burrow a friend glass carboy but we couldnt find the right carboy airlock plug so we tasted it and it was good did a hydrometer reading and it was pretty far along (1.010) was good and sweet and pretty boozy 7.8%
We just decided to keg it and enjoy, force carbed at 30psi for a day and a half then it was ready for consumption.
only thing I might change would be reducing the sugar and getting the ABV% down a bit because it hits hard and ive had a few hangovers from a light evening of drinking this.
