So I saw so “tart apple cider” at the store the other day which claimed to be a fresh cider from a mix of apples. It was $5 a gallon and I thought holy crap it’s time I started the experiment in I’ve been stewing on.
The experiment is really just 2 recipes that I thought of and have yet to see.
Both 3 gallon recipes, looking for input to improve…
Recipe 1 - apple forward botchet
6 lbs wild flower honey - caramelized on low heat for 60-70 minutes
Apple cider to 3 gallons
D47 yeast
8g Fermaide O at start, 1/3rd & 2/3rd sugar break
Pectin enzymes
American medium toaster oak chips in secondary for 2 weeks
Rind of 1 orange in secondary
Back sweeten as needed with apple juice not past 1.005
Carbonate?
Recipe 2 - smoked maple cider
6 lbs grade b maple syrup - smoked for 2 hours in smoker
Apple cider to 3 gallons
QA23 yeast
8g Fermaide O at start, 1/3rd & 2/3rd sugar break
Pectin enzymes
American medium toaster oak chips in secondary for 2 weeks
Ride of 1 orange in secondary
Back sweeten as needed with apple juice not past 1.005
Carbonate?
