My first attemp at cranberry. Open primary fermentation.

4.5 gallons Ocean Spray Cranberry (ph 2.56)
1 lb chopped raisins (flavor and nutrient)
10 lb sugar
1/2 gallon of water (5 black tea teabags steeped for 10 min) for tannin and to raise ph
18 g Mangrove Jack Cider yeast.

Proofed and pitched the yeast at 1200 yeasterday the 15th. Checked today at 1200 for a stir and a sniff. Stuff is going mad...closet never smelled so good!! Will let you guys know if I get any H2S; my cider DID Rhino Fart with same yeast. Will rack to secondary at 5-7 days. Again at 2 months. Should be done by Aug. or Sept.
 
Update: Gonna add 3 lbs. of Oregon Fruit Products Peach Puree and some pectic enzyme at first rack (4 weeks). So it'll be a cran/peach wine.
 
Tomorrow will be 10 days post yeast pitch (15th of April)
Five days open fermentation, with closed fermentation and lock on the 20th.
Lock is still very active with a nice bubble at 3-4 sec intervals...still very active IMO.
Gonna add the pectin treated peach puree on the 20th of May.
