Jimi Hendrix's cover of "All Along the Watchtower" by Bob Dylan. Dylan's version sucks, IMO.
Anybody's cover of a Dylan song is better than Dylan's rendition. Fantastic songwriter...AWFUL singer.

Dave Matthews does a great job with "Long Black Veil." Technically, it's a folk tune, but Johnny Cash popularized it slightly. This isn't the best video, and I've heard the band do a better rendition, but it's the best that YouTube had to offer.

Not completely true

I don't think this song would sound any better with a good voice, it would be just wrong

I have, perhaps 100 - 200 interesting covers in my collection. Most aren't necessarily better, just interesting. I see alot of covers here that are financially motivated.

The title says it all...

To start of, Eva Cassidy's cover of Sting's "fields of gold" gives me goose bumps. Simply amazing
...
...and Jeff Buckley's version of Leonard Coen's "Hallelujah":

Thanks for turning me on to Eva; the wife and I were trying to figure out who did that cover. A few mins googling reveals to me that she died of cancer. And of course Jeff didn't make the trip, either.

I don't find these better than the originals but they are still awsome.

I remain unswayed. Most of these are not better.

OK how about Kris Kristofferson vs. Janis Joplin. It's another Dylan type case, with a hell of a songwriter, but really, Kris sounded pretty lousy. Unless you were plastered...

I dunno if it has been posted but Johnny Cash covering NIN Hurt is amazing.

Re: The last 4 posts.
Now we're talking.

Here we have the Residents doing Kawliga with A Billie Jean sample.

Original

Note that the Residents version is not necessarilty better... they just mad it their own.
They added some of themselves to the version and made it outstanding.

Discloure, I have both Easy All Stars disks and they are highly recommended.

You have to admit that before you heard of the Easy All Stars version you wouldn't have conceived a reggae version of that song or the album was even possible.

Speaking of Reggae covers...
How about Toots and the Maytals doing a little John Denver:
