Hey guys, first of all i want to say thank you to all the help and inspiration you all have given me. Now I have a specific question I am looking for guidance on. I have read threads on lager fermentations, and problems and solutions, but I am still just wondering about my beer.
Corona Clone
Grain Bill Mash: 45 min from cold to boil
Light DME: 5 lbs Boil: 60 min
2 Row: 1 lb
Flaked Maize: 1 lb Saaz: 1 oz
WLP833 German Bock Yeast
7/21/12: Started with 7 gallons of cold water in the pot. Put flaked maize and 2 row in a grain bag and soaked it for 45 minutes when it was boiling. Removed bag and put in the DME and Saaz hops. Boiled for 1 hour and poured the whole boil into a bucket for cooling.
7/22/12: Racked into primary bucket and took gravity of 1.040. Made yeast starter and put in the fridge at around 50 F.
7/29/12: Maintaining a temp between 48 F and 55F for the most part, however the beer has not bubbled once. Around 7/27 I pulled off the airlock and smelled the gasses and saw some krausen, so it’s not totally dead. Will wait for a two week primary then rack to secondary.

My #8 Corona Clone has been in primary for two and a half weeks. Since my fridge will not set warmer than 46 degrees, I have been turning it off at night will warm to about 56-58 and before I leave for work I turn it back on to the warmest setting and it cools to about 46. So the temp fluctuates about 10 degrees everyday... not optimal.
The problem is, I haven't seen any action in my airlock. I understand there may be fermentation still, but how long should I leave it in my primary? I would have racked it at two weeks, but I don't want to remove it from any yeast if it is still starting.
