I'm about to tackle a Modelo Negra clone that has flaked corn. I have heard many negatives about using corn. Here is what I have, any ideas?
Also, I have been told that this yeast works similarly to ale yeast, just a little lower temp. I might be able to keep it in the low 60's, but that's my max. Any suggestions?

Flaked corn is easy to use as it just goes in the mash.

I would guess that this is a very good choice for you due to the limitations of low fermentation temps.

If you get a little adventurous you might want to tackle a cereal mash in the future. Its basically a 2 step mash where you cook some cracked corn or cornmeal with a bit of malt and then add it to your main mash to step up the temp.

Alot of fun either way.

Report back on how this yeast is in that style beer as I am planning on brewing a Modelo Negra clone myself.

I brew a Dos Equis Amber clone that uses a pound of flaked corn. Just dump it in with the grain. The corn will make the mash a little sticky, you might consider a hand full of rice hulls.

I have used corn starch instead of flaked corn. The taste was very good, but it did cause some cloudiness in the brew.

Many people don't like the flavor corn adds to a brew, but if you are doing a clone ... Had a 50% corn ale last month. A bit strange.

Good choice on the yeast for your conditions. You could also use a low-attenuation, neutral ale yeast.

I love the flavor of corn in a light ale or a lager. Having done both cereal mashes with crushed corn (polenta) and used flaked corn, I would definitely go with flaked corn in the furture - one less step to worry about.

10-4. I use a grain bag, even in my MLT so I am hoping we won't have any gooey clog problems.
