i am using coriander for the first time in a Belgian wit and i was just wondering if i have to crush the seeds before i add them?
or just add them normally?
and do i have to strain them out before putting the wort into the fermenter?

I ground emup in my kitchens blade style coffee grinder that got replaced by the burr grinder. Great results on my freshly carbed wit.

Your method may vary but I used a nylon bag with all my spices and orange peels.
 
Crush/crack. I used a mortar and pestle for the grains of paradiis along with the coriander seeds for my wit. The smell was amazing.

Just like in cooking, doing things like dry-roasting, rubbing dry green herbs and cracking/crushing all help to release the essential oils from them.
