For my first brew, I'm going to keep it simple. I've been told that i need to add 2.2 lbs of DME to this kit, my question is, can i add more then that, say 3.0 lbs and would that improve the taste?

since you are already adding more DME than the recipe calls for I wouldn't add any more.
Put the excess in a sealed Rubbermade container. It never hurts to have some DME on hand. I have used wheat DME as a priming solution with some of my stouts to keep it from over carbonating.

How did this turn out for you? Did the exact same thing and tried mine this morning after 9 days in the fermenter. Not something I'll shout about.
