Hi,

I'm doing a coopers pale ale with beer enhancer 2. The beer has been fermenting for 9 days now and still bubbling intermittently. It is quite clear that there is still pressure within the fermenter has the water is pushed up to one side in the airlock.

Should I wait till the pressure goes down and bubbling stops before bottling or should I just go by the hydrometer?

Thanks

I'm going to guess that you may be at the lower end of the spectrum for ferment temperature to have it still bubbling away. Which is not a bad thing. If you don't plan on racking to carboy, and your gravity is where you were aiming for I'd leave it a while longer to get additional clarity.

If you get Cooper's yeast down to 64-65F,it'll ferment slower. 63F & it slows down & gets sluggish. So it's likely fermenting slower as stated.

Its been at about 69-75 degrees since I put in the fermenter. It was bubbling away almost constantly from day 2-5 and now the bubbling is every 10-20 minutes but as mentioned there is still obvious pressure in the airlock. I might just leave it another day or two and see how it is then. I was just worried that leaving it over the 6 days suggested by coopers would cause any major problems..

I think you brew is only keeping the gaz inside. You could shake the carboy a bit leaving the airlock on. When you say it is still bubbling, is it 1 bubble/minute or more?

No its bubbling maybe every 20 minutes..

Sounds like it's off-gassing dissolved co2. You could take a gravity sample to see where it's at. It's likely finishing up fermentation.

The hydrometer is near the yellow band which I guess is 0. Day 1 it was at the orange band (40).

Looks done to me. When you will transfer, it should be enough to degas to whole thing. You can transfer to sexondary now or let it sot another 1-2 weeks and then bottle

Odds are it's finished, but if you have the patience, leave it for a couple more days. It won't go bad, it'll only clear up.

I left my last batch of coopers pale ale in the bucket for almost a month (with dry hopping), it came out perfectly clear.

Might just leave it a few extra days then. I took a taste test at it tastes very slightly cidery. Hopefully that will clear up after secondary fermentation..
