I bought this can of coopers light malt extract (unhopped and nothing a kit). I was planning on replacing the pale LME I've been getting from the bulk HBS in some recipes to see what the difference in flavour is. Do I just use this the same way? Boil for 60m and add hops at the appropriate time?

I'm not familiar with Coopers extract, but since you haven't gotten an answer yet I'll take a stab at it. Unless there's something weird, you should be able to use it the same as other extracts. From a quick look at this website https://wickedbrewgear.com/light-malt/ it seems to be pretty standard. Maybe someone has used it before and can give you a more definite answer.
