I am doing a Belgian Wit and the swamp cooler/ice tub is chilled to 58-62. Will this be an issue, or be ok? This is the first ferment I have "tried" to ferment in a cooler. I was swapping out 6 water bottles every 12 hours, now I have dropped down to 4, and it is staying around 62.

I guess this is ok as long as the yeast does not go dormant? I also think this will be a long slow ferment from what I have read on White Labs website. 2 weeks seems to be the norm.

I need a damn fermentation cabinet. I know!

Should be ok. Let the yeast warm it up a little if you'd like, but if the yeast are still fermenting, then I see no problems. It'll just be a very clean wit.
