I have to share how well the "wet towel method" works for keeping fermentation temps down.
I had been looking for a way to keep my temps down a little from room temp when brewing an Irish Red or Dunkelweizen. After searching I found the "wet towel method" I placed my carboy in an old boil kettle with about 2" of water in it and wrapped the carboy in a wet towel. The towel acts as a wick sucking water up from the bottom of the kettle. I have to say I am amazed at how well this works. All I did was check on it a couple times a day. To my amazement it held 64º for 3 days! Normal Fermentation in my house usually holds at 70º-71º. Just though I would share
