New brewer here with a couple recipe questions here...
1. For my next brew, I'd like to make a SMASH pale ale with a heavy mosaic hop element. I found an AG recipe on HBT for a Yellow Rose clone, which I've never had but sounds like what I'm aiming for. I am only prepared to make extract brews at this point, so would my LME substitution (noted in recipe below) be sufficient?
2. Given that my first two brews were on the low to mid ABV spectrum, I'd like this next one to be somewhere in the 7.0-7.5 range. From what I've seen of this recipe, it comes out in the 6-6.5 range, so is there a way to boost the ABV without completely throwing off the flavor of the beer? Would this entail more LME?

13.5 weyermann German pilsner (will sub 9 lbs German pilsner LME)
1 oz mosaic @30
1.5 oz mosaic @15
1.5 oz mosaic @0
3 oz mosaic dry hop - 2 DHs of 1.5 oz each for 3-4 days

So basically the only thing I'm changing right now would be substituting the 9 lbs pilsner LME for the 13.5 lbs Weyermann pilsner malt. And any additions I could make to boost the ABV slightly...
