So I'm getting ready to buy a conical, stainless fermentor. Is it a big deal if I just let gravity move the beer into the keg? Or is it better to buy one I can pressurize to do the transfer?

using pressure to move beer from a primary and you can remix the lees into the beer. not good, Use of gravity is best unless you have a good filtering process.
Good luck on the new conical, those are cool

We used gravity to fill our kegs from our pilot system that the brewery I used to work at
