Hey guys!

So I haven't posted here in a while. Things have been incredibly busy brewing test batches and preparing to launch my company's (Pint Pursuits) first beer in October via contract brewing.

Cut to the chase, looking for another hop to add to my late additions, hopback and dry hop to get some juicyness ( a little pine is fine too). Currently using Centennial and Mandarina Bavaria as I have secured the latter on contract already.

Since things like galaxy and amarillo are unavailable, I was looking for some input on Azacca and El Dorado, as they are available and seem to fit the profile. Haven't used them yet, waiting for my shipment from Yakima to come in to test. Also open to other suggestions.

Below is hop schedule for 10hl test batch we did.
Hops:
1200 gm Centennial (8.8 AA) @ 60 min
1000 gm Centennial @ 15 min
900 gm Mandarina Bavaria (8.5 AA) @ 15 min
1000 gm Centennial @ 5 min
1000 gm Mandarina Bavaria @ 5 min
1000 gm Mandarina Bavaria @ Dry Hop

Grist is 45% Golden Promise, 40% Pale Ale, 5% carafoam, 5% crystal 20, 5% malted wheat. Yeast is Vermont/Heady Topper.

The 10hl pilot doesn't include FO addition, which will be swapped for the 5 min using a tepid hopstand or a hopback. also going to up the DH.

I don't think you could go wrong with either one of these. Perhaps the Azacca would lend itself well to the Mandarina. Just my thoughts. I just a single hop Azacca a month ago and loved it. I typically blend El Dorado with Mosaic/Citra/Galaxy....hops of that type.
