Hey everybody. Newbie to this forum here, pretty new to mead as well but I've been enjoying lurking and reading up. I've brewed a few beers and a few simple meads (plain, orange and spices). I'd like to start a batch now, hopefully to be ready for next Christmas, and I have an idea in mind about how I'd like it to taste. Can anybody comment on this recipe and tell me if I'm making any obvious mistakes?

6# mesquite honey, 1# raw honey
1 quart 100% cranberry juice
1 orange
4 oz homemade apple butter
2 cinnamon sticks, 4 cloves and a pinch each of nutmeg and allspice
A small box of raisins
Spring water to 2.25 gallons
1 packet of Lalvin D-47

According to the calculator that should make OG come to about 1.1.

The honey is from Trader Joes and the cranberry juice is just juice, not blend or cocktail, so a quart only contributes about 40g of sugar. Does a quart sound like a crazy amount of the stuff? I would have thought I'm setting up something overpowering but I've been reading about guys using 3 quarts in a 5 gallon batch. I have convenient 3 gallon spring water jugs to work with.
