Made my 2nd all grain batch today, but it is very light in color in comparison to extract that i have bought. 1st batch was so lacking in sweetness that i added 1/2 lb of honey to get iot close to extract taste. this batch turned out better, only the color was off. Any suggestions?

Converting extract recipes to all grain is tricky because you never know what's in the extract.

What extract?

Also, extracts tend to end high on the FG.

With that said, honey should make it finish drier, not sweeter. For sweeter, you need unermentables like lactose, Carapils, or mash at higher temps.
