Now out of curiosity, I was going to try cold crashing an amber ale after it was fully attenuated. Just to see if it would clear up a bit. Does anyone have any ideas if this would work or any problems that could arise? Would I need to repitch some yeast at bottling? Thanks

It may work to clear the beer. It depends on how cloudy it is, and what's making it cloudy. You shouldn't need to repitch any yeast. Even if you rack the beer off the cake, there is still more yeast than you need to carb the beers. Cold crash it for a few days to a week and see what happens. It isn't going to get any clearer than it will be at that point.
