So I have a Belgian wit that I am planning on kegging…problem being my new keg is arriving the day after I leave town for a week and a half. I am a little scared that there might be a few hot days here in SoCal while I'm away. So can I just leave it in my fridge and cold crash it for that time? It's going to be force carved so I'm not concerned with residual yeast.
