I am new at this so please bare with me.

My primary is done and I need to cold crash the beer.

Is it ok if I leave the the fermenter in the fridge for 48 hours to cold crash it?

I plan to rack into corneys on Tuesday.

Sounds good to me... with winter here, I have just been leaving mine in the garage @ 35F for a week.
 
ok awesome...I think I will save myself the hassle of clearing out the garage fridge and just dump a bag of ice into the tub the sanke fermenter is sitting in.

I have a one gallon plastic jug (drinking water) on the floor next to the keg on the floor. I learned the hard way. I came home this morning. The temps dropped last night and the the siphon sucked in all the water into my sanke fermenter (1/4 gallon water with a tiny drop of Starsan in it). I made the mistake of setting the airlock at the same heighth as the blowoff tube.

I think it will be ok.

When cold-crashing I don't even bother with the airlock. A sanitized peice of aluminium foil is all I use. Suck back is no longer a concern.
 
I cold crash with my airlock in place, I use vodka instead of water so when I get some sucked in I have no worries, but I might just switch to sanitized foil, that sounds like a great idea and it will also save me the trouble of removing a real cold bung that is stuck in the carboy when I keg, that rubber isnt so plyable when its 35 degrees.

No you want to cover it unless you want to suck in oxygen and all the other good airborne stuff.
