I have a wine fridge that will fit a 5 gallon fermenting bucket.

My question is, using an ale yeast such as WLP 001, what would be the proper cold crashing temperatures in order to keep the yeast viable for bottling?

It goes as high as about 54*F with nothing in it. I would think that with my FV in it then it would probably be a few degrees warmer due to the mass.

I just want to make sure my yeasties are OK for when it is time to bottle.

Like Yooper said, 30 degrees minimum. Even at these low temps there is more than enough yeast left in suspension for bottling. I don't have a controlled method for cold crashing, but during the winter I just put my FV outside for 3 or 4 days. It gets into the teens here and I've never had an issue come bottling time.

I have a temp controler on a chest freezer that i cold crash, lager, and carbonate in and keep it set to 38 degrees.
