As a chef, I have found myself trying to incorporate food into the homebrewing hobby of my girlfriend and I. We are currently brewing a vanilla maple oatmeal stout as we speak, which got me researching other stouts. We started drinking a locally brewed milk stout that is delicious and I thought: why not a coconut milk stout? Seeing how we are reasonably new to this hobby, we were looking for any suggestions to adding sweetened coconut flake to the boil, and possibly racking over coconut during secondary....
 
I toasted 12 oz of coconut, racked my milk stout to secondary and tossed the coconut in a grain bag for 7 days. It's damn delicious.

Nice! Did you use lactose at all?
