I'm making a St. Paul porter, but I make 2.5 gallon batches so I bought the ingredients separate and just divide them up. It calls for .5 oz of cascade at 1 minute, but I have a .5 oz of cluster already. Can I just use that and not waste opening a new cascade? I mean I know I CAN, but just will it make much of a difference?

Well, Cascade is more citrusy/grapefruit, while Cluster is hops-spicy with an undercurrent of darker fruit tones.

You can, but it won't be the same, IOW. Either way, it will make beer, and you might like this better, who knows.

I can't imagine it will make much difference in a porter, which is a strange beer to be adding a 1 minute addition to in any case. Go for it.
