I've been asking why my cider had not cleared. Then remembered it's a mixed fruit cider home kit and the fruit was very dark when I added it so would it stay dark. Ive been wondering why if wouldn't clear and maybe it's not ment to.

Adding pectic enzyme may help with the clarity, but I'm too new to brewing to give specifics past that. I know a lot of people say it should be added before fermentation, while some others say you can add it at any point in time. There's also fining agents, which I have absolutely no experience with.

Sometimes, the cider just needs time - make sure it is finished fermenting, give it time to settle out a bit, then rack it and let it clarify more. Cooling the cider may also help settle some of the pectins. Past that, I can't really give much advice since I'm only a month into batch 1.

It's not the end of the world if it doesn't clear, as long as it tastes good :) As long as it's good, it's all good. If anyone you serve it to is turned off by any cloudiness, well, then....perhaps they don't deserve it ;) My limited understanding of pectic enzyme is that it is much less effective once alcohol is present, that it should be added before pitching yeast....I dunno. Given time (sometimes a LONG time) most brews will clear on their own
