Cider + Wheat LME + WLP300 = ?

So I have some WLP300 left over from a hefe and was thinking of a way to use it. Since WLP300 fermented warm throws off a lot of banana flavor I figured it would blend well with apple cider.

My working recipe for 1 gallon:

1lb Wheat LME
1 gallon of Apple Juice
A few pellets of Simcoe hops for a citrus note(thinking 1/10 - 1/4oz)
WLP300 small starter

Dissolve pound of LME in warm apple juice
Bring to boil, add Simcoe pellets, boil for 10 minutes
Chill and add to a small starter of WLP300 in a glass jug w/ blow-off
Ferment warm, 70F+
Cold crash and decant into swing tops with some priming sugar

Will this turn out drinkable or will I make swill? Are Simcoe hops OK? I also have Hallertau but don't think they'd give the citrus I am looking for. :drunk:
 
I suspect it will be drinkable. Good move on using minimal hops. Also, because you boiled the cider, you may end up with some pectin haze.
 
I've done a similar recipe (I used wyeast NW ale), however I boiled the malt/hops separately then added the cider. I think I boiled 2 gallons and added 3 gallons of cider, which made the chilling process cake.
It took a bit of aging but its pretty refreshing now.
 
how did this turn out thinking of doing something simlar with some stuff I have laying around.
