This is my first attempt at a cider using 5.5 gallons of fresh store bought cider. Cider was pasteurized but did not have any preservatives. Made a starter with White Labs English Cider Yeast - wlp775. Added 1/4 tsp/gal pectic enzyme 12 hours before pitching. OG - 1.048. At one week the reading was 1.014 and checked again today (total of 16 days since pitching) and it's still reading 1.014. Am I stuck? Need more time? Re-pitch?

My plan was to rack to secondary once fermentation completed around 1.000. Add 2 oz of El Dorado hops to dry hop and bottle with dextrose. Any thoughts or help is appreciated.

I added nutrient prior to pitching. I am using a refractometer for Gravity readings? Should I switch to hydrometer?
 
The alcohol in the fermented cider does not allow for an accurate reading from your refractometer. You need to run it through a calculator or use a hydrometer to take SG reading when alcohol is present.

I usually use this calculator with the "wort correction factor" set to 1.000:

With your numbers from above, it comes out to an FG of 1.002.
 
This makes me happy. I just bought the refractometer and was excited to play with it. I found the refractometer tool on BeerSmith to get the adjusted reading. Thank you everyone. I'll be racking tonight and dry hopping soon. Thanks again!
