Hi, I just finished racking my first batch of cider and i was wondering if anybody had any good cider recipes? I know there are SO many juices and experiments to be had but I'm not sure where to start.

I'm looking for a 5-6% mostly dry, semi-sweet cider but with lots of flavor. I know everybody on this site has years of experience and tons of recipes but i would appreciate just a few starters :)

I wanted to make a couple good balanced ciders then try for some higher ABV stuff later, apple wine... so any good starting points would be greatly appreciated! THX! :)

P.S. If anybody could suggest some good books too that would be cool.

Just an FYI, "mostly dry" and "semi-sweet" are a contradiction of terms.

A short guide to how Wine is classed (and i'm sure cider can be classified the same way):
Dry: a specific gravity of 1.002 or less.
Semi Sweet or "Demi Sec": 1.003 to 1.010
Sweet: 1.010 to 1.025
Desert Wine (Very sweet): 1.025 and up.

I have yet to find a dry cider with lots of flavor. Maybe this means that I haven't found one yet, or maybe this means that my pallet sucks. :D
