On 11/1 I made a cider using
2 gallons cider
1 qt Just Cranberries
1 qt Just Pomegratate
1 Red Star Cote de Blanc wine yeast

SG 1.070

Tastes great at basement temp (low to mid 60s). The gravity today (11/14) is at 1.010. I'm sure I could take it further but I want the wife to be able to enjoy it too. I took my other cider from 1.070 (or higher - i forgot to take actual measurement so I used online calculator) down to 1.000. She said it "tastes like alcohol". Lies...it's good and I can taste the fruits.

Regardless, I'm willing to sacrifice a couple points to have something for her to drink. 1.010 is an acceptable number to bottle at, right?
 
Sure, that is semi-sweet more or less.

You should sorbate it, or pasteurize the bottles, since I doubt the fermentation is done.

Search here or on the interwebz about pasteurizing in the bottle. Basically you bottle, test periodically for carbonation, and then run them through the rinse cycle of the dishwasher.
