This is a Christmas beer I decided to brew with my left over pound
of wheat LME. It is a little on the hoppy side for my taste, but it
is actually not too bad. It is a hop that I like, at least, and it mixes
well with all the other flavors in the beer.
1 Gallon Batch
1# Wheat LME
2oz cane sugar
2oz honey
Steeping Grains
2oz dark munich
2oz chocolate
2oz Crystal 60L
1oz rolled oats
.25tsp ground cinnamon
.0125tsp ground nutmeg
.0125tsp ground ginger
**all spices put in with 10 minutes left
several pieces of orange peel
1gram Simcoe hops 60 minutes
1gram Simcoe hops 10 minutes
I've already taken this off the yeast and it is sitting the secondary. I plan to rack it one more time (got a lot of sediment falling out still) and let it sit for a week or two. I've done that with my other two brews, and they came out really nice.
