I have a great stout recipe that I want to turn into a chocolate stout. I was planning to use cocoa nibs in the secondary after fermenting but wanted to know how much to use in a 5 gal. batch and for how long.

Cacao nibs will be a slight chocolate flavor, but id start around 8oz and go from there. Ive had great success from cocoa powder in the boil; 4oz will give a good chocolate flavor.
 
OK, thanks! Have you had any issues with the Cocoa being fully absorbed and staying suspended in the beer for several weeks in the keg? I've heard the cocoa nibs absorb fully into the beer in the secondary fermentation so there is no separation.
 
Since its in the boil it'll fully dissolve. I normally add around the 15 minute mark; it gets good flavor without much added bitterness.
