Here's my 1st go at a Stout! I've been putting this together all week and was further motivated today when I paid a visit to my LHBS (Southern Brewing & Winemaking in Tampa); they had Chocolate Raspberry & Cacao Vanilla on tap for their anniversary. Both were fantastic - I brought a growler home filled with 1/2 of each!

I racked this to a secondary last night (Gravity was at 1.026). Since I forgot the lactose during the boil, I put 2cups of water to boil and added 12oz of lactose along with 4 mandarin oranges (peeled and sectioned) - about 5 minutes boiling. After the boil, I took a sanitized spoon and pressed each slice to break the skin. I then added the mix to my secondary and racked the stout on top of it. While at it, I dropped in a muslin bag with 4oz of cacao nibs. I plan to leave this in the secondary for 10-14 days. Woke up this morning to active fermentation...
 
This sounds interesting. I'd like to hear how it turns out. What kind of hops are the Mandarina Bavaria? I'm not familiar with those
