Anyone tried anything like a chocolate caramel ale? Something using chocolate malt and caramel 60L to get both those flavors together?

those ingredients have most certainly been paired. are you thinking something very sweet and desserty?

I'm not talking a chocolate and caramel milkshake or anything but some sweetness will be ok. I have some caramel vanilla cream ale in one of my primary buckets but I was thinking of something a little less sweet with more of a pronounced chocolate tone with the caramel just adding to that flavor. Sweet is ok with me as I am always trying to get the non beer drinker that lives with me (aka. wife) to try more beer. The sweeter beers just happen to be the ones she likes most.
