You could work them into a wheat beer or stout of some sort, but working with fresh fruit does require some special steps to ensure that the fruit is clean. What about cherry apfelwein?

I used cherries and raspberries, in a lager, earlier this year. See the fruit beer section for my CherrBerr Lager. If I had that amount of cherries, I would just make a cherry lager, with the recipe I used before. And, yes, there are special steps that need to be taken, when using fruit.

Good luck

Ok....So I'm not going to say "MAKE MEAD!"...I don't really like Cherry Mead.

BUT...

I'm growing quite fond of sour Fruit beer. Cherry Lambic might be a bit overkill, but why not a sour mash with Cherries in the secondary?
