(Obviously) I'm new at this, and after reading John Palmer's Home Brew book online, I wonder why I can't simplify my equipment and technique the first time I try a whole grain brew.

If I strain the brewed wort & barley through a cheesecloth into the ferment pail, while gathering the grains into the cloth, then dunk and rinse it through clean hot water in another pot, throw it away, and combine the wort waters, why wouldn't this work well instead of a laudering tun and sparging for hours?

Congratulations, you've just (re)invented BIAB. :)
Google it (Brew In A Bag). It's a very simple and effective way to get into AG without a mash tun.
