I have an American wheat that has been fermenting since 12/28. Today airlock activity has stopped. Is it time to start taking FG readings or should I wait till saturday?

I'd wait. Airlock activity isn't a good indicator of if fermentation is complete. Since it's only been a little over a week you probably a few more days left of fermentation. Even if it is done your giving the yeast time to clean up after themselves
 
It's not going to hurt anything to check now, but I agree that you're probably wasting your time checking this early.
 
That's what I figured. I was planning on checking next Saturday anyway. I was just kind of surprised that airlock has stopped.

You should wait.

The best advice I've gotten on this forum is that patience is a virtue for a homebrewer.

Also FWIW, I typically get ZERO airlock activity in my fermentor (sometimes I'll get a bubble or two). But I've always had good / full attenuation.
